Description
Sucrose Phosphorylase belongs to the 13th family of glycoside hydrolases and is also known as glucosylglycerate phosphorylase. It is an enzyme that catalyzes the transfer of a glucose glycosidic bond and can catalyze the synthesis of 1-phosphate-glucose from sucrose and inorganic phosphate. The enzyme primarily uses sucrose and 1-phosphate-glucose as donors and various substances such as polyhydroxyl sugars, sugar alcohols, phenolic hydroxyls, carboxyls, etc., as acceptors, catalyzing the synthesis of various glycosides. Sucrose Phosphorylase catalyzes the phosphorylation reaction of sucrose, producing D-fructose and α-D-glucose-1-phosphate, with the reaction equation: Sucrose + Pi = α-D-glucose-1-phosphate + D-fructose. Unit Definition
One active unit is defined as the amount of enzyme required to catalyze the production of 1.0 μmole of D-fructose, mediated by sucrose, in 1 minute at 37°C in a 1× Sucrose Phosphorylase reaction buffer system.

1× Sucrose Phosphorylase Buffer: 100mM KH2PO4, 200mM Sucrose, pH 7.6.
