Description

β-Galactosidase catalyzes the hydrolysis of lactose into its monosaccharide components, glucose and galactose. It also catalyzes glucose transglycosylation to form the inducer of β-galactosidase in the feedback loop - allolactose.

Application

β-Galactosidase is used for reverse-phase (RP) chromatography. It is also used for the hydrolysis of lactose in whey.

Unit Definition

At 30°C, one unit hydrolyzes 1 millimole of lactose per minute at pH 4.5.
